Mamey Raw Honey
Mamey produces a very dark brown honey with a strong but very pleasant flavor. It is particularly delicious for cooking, baking, and wherever a strong flavored sweetener is wanted. As with all dark honeys, Mamey honey is particularly rich in both vitamins and minerals, and does not crystallize easily. It is sought after by a growing clientele who usually consume the year’s limited production by early April.
MAMEY TREE
Mamey is a tropical fruit tree, native to Central America that in the USA grows only in the southernmost tip of South Florida. The fruit resembles a large Avocado in size and shape, and has long been a favorite in the Cuban community, where it is usually eaten as a desert.
The fruit is an excellent source of vitamin B6 and vitamin C, and is a good source of riboflavin, niacin, vitamin E, manganese, potassium and dietary fiber. Research has identified several new carotenoids from the ripe fruit. Many of the qualities of the fruit are also contained in the honey from Mamey flowers.
