Ingredients:
6 chicken thighs, bone-in and skin-on
Salt and pepper, to taste
1 tablespoon olive oil
For the Honey BBQ Sauce:
1/2 cup ketchup
1/4 cup wildflower honey
2 tablespoons soy sauce
2 tablespoons apple cider vinegar
2 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper (adjust to taste)
Salt and pepper, to taste
Instructions:
Prepare the Chicken:
Preheat your grill to medium-high heat (about 375-400°F / 190-200°C).
Pat dry the chicken thighs with paper towels. Season generously with salt and pepper on both sides.
Make the Honey BBQ Sauce:
In a small saucepan, combine all the ingredients for the honey BBQ sauce - ketchup, wildflower honey, soy sauce, apple cider vinegar, minced garlic, smoked paprika, onion powder, ground cumin, cayenne pepper, salt, and pepper.
Bring the sauce to a simmer over medium heat, stirring occasionally. Let it simmer for about 5-7 minutes until slightly thickened. Remove from heat and set aside.
Grill the Chicken:
Brush the chicken thighs with olive oil on both sides to prevent sticking.
Place the chicken thighs on the preheated grill, skin-side down. Grill for about 5-6 minutes per side, or until they develop grill marks and the internal temperature reaches 165°F (74°C).
Apply the Honey BBQ Sauce:
Brush the grilled chicken thighs generously with the prepared honey BBQ sauce, turning them to coat evenly. Reserve some sauce for serving.
Continue to grill for an additional 1-2 minutes per side, brushing with more sauce as desired, until the chicken is fully cooked and the sauce has caramelized slightly.
Serve:
Remove the chicken thighs from the grill and let them rest for a few minutes.
Serve hot, garnished with chopped fresh parsley or cilantro if desired. Serve any remaining honey BBQ sauce on the side for dipping or drizzling.
